Peanut Butter Low Carb Fudge

I tried this recipe that I found on-line last night for a Low Carb Peanut Butter Fudge. Its pretty tasty stuff and super easy to make. It probably took me under 10 minutes to do and cleanup was a breeze. I will say that despite the simple nature of the recipe I was still able somehow to messed it up slightly. I accidentally used regular splenda instead of a powder sugar substitute although that may be what they wanted me to do. Still tastes great, but I imagine that a powdered sugar would have had a bit more of a fudgy consistency. The batch I made was a little crumbly. Still tastes great, and seems like you could add something more to it to really make it fun. Maybe some nuts?

Any ideas? What would go well to mix in with peanut butter fudge that still might be low in carb?

This recipe is a very useful one, I think, for low carbers. Caution!! Do not combine this recipe with your regular diet if you are not low carbing. It’s very high in fat! Enjoy!

What you’ll need:1 (8 oz.) package cream cheese, softened
1 cup smooth peanut butter
1 cup butter, softened
1/2 c. powdered artificial sweetener
1/2 tsp. vanilla
In a microwaveable-safe bowl, heat the cream cheese, peanut butter and butter until the butter is melted.  Whisk this mixture well.  Blend in the artificial sweetener and vanilla.  Pour the fudge mixture into an 8×8 or 9×9 inch pan, smooth the top, cover and refrigerate until firm.
Slice into one inch squares and store in the refrigerator.

I want to say that there is about 2 carbs in one square inch. It's pretty tasty and rich. Your friends thats arent doing low carb may want to avoid it though.

Hi! I attempted this tonight and it didn't turn out at all :(. The butter seemed to seperate on top of the mix as soon as I added the sweetener. Did I use the wrong butter maybe? Gah my inner fat kid is so disappointed. Thanks!!!

Hi! I did this tonight, it's in the fridge now:) and the same thing happened. I have put the sweetener spoon by spoon and it split at the third, I suspect it was the heat- sweetener combo. However, I managed to fix it by adding cold water (as cold as you can get from the tap) little by little and keeping wisking the mix until it went creamy again. (This is a trick I use when home made mayo splits).

Not sure what went wrong for you. Maybe old butter? Maybe it was heated up to much. Butter can burn if not careful. Try again. It's worth it.
