Low carb pasta sauce.
Ricotta Cheese.
Fresh Italian sausage.
Mozzarella
Awesomeness.
Basically I used sliced eggplant where the lasagna noodles would normally go. Just layer cheese and meat and eggplant with some sauce. Bake for 20-30 minutes.
It was incredibly delicious and my wife ate it all up, leftovers included.
