If blogging is any refection of my current low carb diet then I am in big trouble.

Lazy with a capital L.

Time to get back at it. So, Low carb friends. Send me your tips, tricks, and anything that will help me to get going strong again.

You guys had a baby not too long ago, right? Life happens. When I need to get refocused, I start tracking immediately. No fudging the carb count, either.

Just found your blog and love it. I've been on Low carb for almost 2 weeks. I haven't weighed but I can tell I have lost. LC is the best way to lose weight. I saw a quote today that said, "Obstacles are what you see when you take your eyes off of your goal". I've lost 40 lbs and have keep it off for a little over a year. Time to get serious again.

Hi, I just now found your website through Pinterest. I've been dieting for about a year & a half now. My hubby is diabetic, & I am very overweight & have severe osteoarthritis & / or Degenerative Joint Disease in most of my joints due to a genetic collagen defect. So I've got us on a low carb & low calorie eating plan. I don't like to use any word that has the word "die", as in "DIE-et", LOL! I need to lose about 40 more lbs to have a hip replacement. But mainly I need to lose weight to be stronger & healthier, & happier with myself & my life. I'm losing the weight very slowly on purpose, with no gimmicky skams that don't work. It took many years for me to gain all this weight, so it's foolish to think that some quick weight loss scheme will make me lose it & keep it off, which of course should be our goal. What helped me most is when I realized that each bite, snack or meal I take is a decision that only I can make, to eat healthy or not. If I eat healthy the weight will come off. If I don't it won't. It's that simple. No one can make the choice for me. Cheating happens, & beating ourselves up for it just makes it worse, so don't do it! Just pick yourself up, dust yourself off & get back on track. I've never read Dr. Atkins' book, but I know its basic idea & it's a good one, but like you I don't believe you have to spend a fortune for his book or his foods, etc. to use the principles & ideas & lose weight. I hope to see more of your good ideas, encouragement in the future. There is an online group that has helped me a lot, it is called Fat Secret (www.fatsecret.com). It is an group for weight loss, where you do weigh-ins, log your food journal, etc., & meet many others who are also trying to lose weight. Some are on Atkins or other diet plans, & others like me are basically doing it on their own. I'm not being paid or compensated for recommending them, it's just a great group that has helped me & maybe it could help you too, if you would like to check it out. I was enjoying the Atkins life style BEFORE there was all those "Atkins products' out there. Yes I read his book, his 1st book, and it made sense to me... I do admit that after the induction phase, I tweak/modify it a bit to allow for my milks, fruits & higher carb veggies otherwise avoided. If you make it a life style instead of a diet, it is healthy and effective.
I found myself deserted by my husband one day, became mildly depressed (I never have stayed down for long... a fighting gene according to my family & friends), & I lost track of this plan for one reason or another and gain a massive amount of weight... 275# on my 5'7" frame in less than 3 years time.
I have started working on reclaiming my pride and self image & finding the me that was lost. On 9/18/2015 I put my self back on the original Atkins introduction meal plan, cut all high carbs from my dietary intake, (I have managed to resist my favorite snack with my coffee at work), and as of today 10/10/20015, I weighed in at 259.6#!! I'm happy and even more motivated.
I have my children's blessings and support, as one daughter told me about a year ago.... "Mom, you need to get on Atkins. It is the right plan for you because you were at your happiest & healthiest back when you followed it."" I think I have smart children, so even though it took it a "minute" for it to sink in, I finally got it.
besides.... all this FAT keeps me from enjoying my life... Dancing, gardening, playing with all my gran'kids.........
Atkins can be a healthy eating plan IF you are smart about it.. JMO

I'm using all the leftover ham for dinner tonight.

Broccoli, Ham, and Mozzarella Baked with Eggs
(Makes 8 servings; recipe created by Kalyn.)

Ingredients:
4-6 cups very small broccoli flowerets, blanched about 2 minutes, then drained well.
1-2 cups diced ham (1/2 - 1 lb.)
1 cup low-fat grated Mozzarella
1/3 cup thinly sliced green onion (optional, but good)
8-10 eggs, well beaten
Spike Seasoning (or other all-purpose seasoning blend to taste, about 1 tsp)
fresh-ground black pepper, to taste
sour cream, for serving (optional; I'd love this with a squeeze of Daisy)


Instructions:
Heat oven to 375F/190C. Spray a 9"x12" casserole dish with non-stick spray. (The dish can be slightly smaller too, especially if you use the smaller amounts of ingredients.)

Bring a medium-sized pot of water to a boil and cook the broccoli just 2 minutes; then pour into a colander placed in the sink and let it drain well. Dice the ham while the broccoli drains.

Layer broccoli, ham, Mozzarella, and green onions (if using) in casserole dish. Season with Spike Seasoning and fresh-ground black pepper and pour beaten egg over. Use a fork to "stir" the mixture just until all the ingredients are coated with egg. (It might look like there is not enough egg, but carry on!)

Bake 35-45 minutes, or until all the mixture is set and the top is starting to lightly brown. (If you use the higher amount of eggs, it will take the longer baking time, but start to check after about 30 minutes.) Serve hot, with sour cream if desired. This can be kept in the fridge for at least a week and reheated in the microwave.

Hello! I just found your site by searching whether or not Five Guys has a low-carb burger. Thanks for the info! :) I was in a major cooking rut myself & am very familiar with what you are going through with a new baby as I have 2 little ones, 4 & 6 now, that sounds old! For New Year's I started Paleo. There are so many great recipes & meal planning / grocery shopping tools out there. It requires a little planning but has been fun so far. I'm enjoying getting a ton of additional vegetables into my family's diet, and this way of eating has really calmed my stomach! I recommend checking out some of the blogs as Paleo is pretty similar to Atkins.
