You're probably wondering why I haven't been posting to the blog as often lately. Well fact of the matter is I have been having some computer issues. Hope to get some new stuff up soon. Be patient.
Another sweet Costco deal. Its 5lb tub of peanuts for $6.99. These peanuts are super crunchy and are very large just like they say. They make a great snack and are becoming a staple in our house. I love the salt. Since my diet has changed I feel like I crave salt a lot more. Its a great price, and with a peanut shortage in this country, in never hurts to buy in bulk. You know, in case of that end of the world scenario hits.
Good ole meatloaf. Nothing warms ones inside like meat that has been pressed together into the shape of a loaf. Yeesh, "Loaf", thats a word we can probably agree isn't the most appealing, right. Personally I love meatloaf but that word gives me the jitters. Still if you are able to look past the vocabulary here you might have a pretty good frozen dinner. I was craving some curry the other day and wasn't in the mood to go through all the work to make something myself. I really wanted something quick and easy. I was walking through the store and I came across this Patak's Curry Simmer Sauce mix. Curry can be a lower carb option with a lot of flavor if its prepared the right way. Some recipes have a lot of sugars in it and other things that can increase the carb count. This one, I felt was right in the middle. A little higher in the carb count than it would be if I made something from scratch, but the ease of use helped to make things go quicker for dinner and I was a lazy chef that night, so it was worth it.
The flavor was pretty good. We mixed it in with some chicken breast and a bag of veggie stir fry. I would have liked a spicier sauce myself, but this one wasn't to bad. Lots of flavor and definitely had a good curry taste. I would do it again, but at the same time I know that I could come up with something a little better on my own. I think I need to do some more curry experiments. You guys have any good low carb, easy Curry recipes? Help a brother out. Not sure how this fits into the Atkin's method being a pasta and all, but they seem to make it work. I don't think they include a lot of the noodles. Seems like it had a lot of sausage, mushroom, and cheese in it. That probably helps quite a bit to have more of those things and less pasta in it.
I thought it was pretty tasty myself. Probably because anything pasta is so far removed from my diet these days that it was a real nice change for my taste buds. I also enjoyed all the cheese they included. It was really gooey and I appreciate that. Big chunks of meat in it too. It is nice to add some pasta into the diet. And this meal did a good job of filling me up more so than some of the other Atkins frozen meals did. If you are craving some Italian food on your diet, this is a good option.
