Sugar Free Snack Pack Pudding in Chocolate and Vanilla

I once heard a stand up comic say that the great thing about pudding is that you can stick it in your mouth, chew on it, and spit it out and it still looks the same. While that is true, I think that the great thing about pudding is that it is delicious and reminds me of childhood.

Its not like you go to a lot of fancy four star restaurants to find pudding on the menu. You will find it in kids lunches however. But man, if we as adults did eat pudding more, I best we might all just get a long.

So Snack Pack has some sugar free puddings. I don't know that I need to say much more about them than that. They taste good are made with Sucralose and are a great little snack for when you are craving something that is sweet but not going to set you back in carbs. Great for lunches, or those late night cravings. I would probably have these on hand more often if my wife didn't cut back my pudding budget so much.

Lloyd's BBQ Ribs

Ok, so I am not sure that these ribs are going to be the cheapest thing for you, but they definitely meet the criteria of this site by being quick and fast.

Lloyd BBQ Ribs are a super easy option for those of us craving the joys of ribs without waiting all day for them to cook, or going out to a restaurant to order them. When we bought our ribs they were on sale, at $5.97 a pouch which is far cheaper than any restaurant would charge for a half a rack of ribs. Regular price may be about the same as going out.  




One factor here to be aware of is that the BBQ sauce that comes with them is pretty sweet and sugary. Lots of carbs in it. That's probably partially due to the large amount of sauce that they put with each pouch of ribs. Like a crazy amount. We threw most of it out. I like sauce on my ribs, but you would have to drink this stuff to use it all. So by removing some of the sauce on the ribs you may help eliminate the large carb numbers.

In regards to the ribs themselves, they are super easy to make. We did the oven and it took about 30 minutes to get them hot and ready. You can also make these in the microwave in have the time. The meat is already cooked so it just a matter of heating it up with the sauce. The ribs were pretty tasty too. Good sweet flavor and the meat comes right off the bone too. We like these and thought that it was a fun quick way to enjoy ribs on a summer day. If you are a rib expert they probably aren’t perfect, but in our house beggars can’t be choosers.

Market Pantry Creamy Chipotle Skillet Sauce

Having a 7 month old baby girl can make cooking a little tricky in our house. On top of trying to cook low carb, we are fighting the battle of keeping a little one occupied enough so one of us can slip away to make our dinner. That being said, skillet sauces have become a hit on our house. Usually they just require adding some cooked meat and maybe some veggies. Very easy and very little preparation needed. Often times the pouches of sauce sell for $1.50-$2 which I think is pretty reasonable for a quick meal.

Target just came out with their own brand not too long ago and they have several different options to choose from. They had one listed as Market Pantry Creamy Chipotle which stood out to me because I really didn't see any other skillet sauces out there with that chipotle Mexican vibe going on. We decided to give it a whirl.

Our first use of the stuff was pretty much how the package suggests. Cook chicken, add sauce, serve over rice. And we liked it. it lives up to its name in being both creamy and chipotle in flavor. I think that in order to keep it low carb I would make this again but next time ditch rice and add some zucchini and yellow squash. This will help to fill you up a bit but not have the high carbs that rice does. The sauce does have good flavor though. We would do it again with no problems.

I think its important to find creative ways to tweek these meals. Often times they recommend rice with it. Don't forget that Cauliflower makes a great rice substitute.

Net Carbs: 5g per 1/4 cup

Pepper Ring Eggs

I am not sure where we first saw the idea to do this, probably Pinterest since the end result didn't look near as pretty as the picture we saw . Still doing pepper ring eggs is a fun breakfast item that can be low carb and have a cool look to it that will impress your friends at the next brunch you throw.

Get some red and yellow peppers and slice them sideways into rings. Crack an egg into the ring and let it cook. Because the pepper will hold the egg in place you may need to cook a bit longer if you don't want a runny yolk, however we like eggs over easy in our house. We also put a little cheese on top, because everything is better with cheese.

Atkins Chocolate Peanut Butter Pretzel Bar Review

Atkins just released a new flavor of their Atkins Advantage meal bars. Chocolate Peanut Butter Pretzel Bar is not too far from the granola bars they have had in the past, but it adds the salted taste of pretzel into the mix. It comes in at 3g Net carbs.

For me personally I got excited to see this bar on the shelf. I love Salty/Sweet things so I had pretty high hopes for this guy. While it does offer a little bit more crunch and saltiness to the taste of the bar, it wasn't anything outstanding. Its not bad either, it just nothing that new. I will say that for me I could clearly taste the preztle in it and that was a good thing. Eating low carb pretzel is a taste you really don't experience that often and so getting that flavor in a bar that is safe to eat helps to fufill a small void in my life. I guess I was hoping that it would have more of a salty sweet taste, but in reality I guess that's wrong for me to think that way as peanut butter isn't that sweet tasting anyway.

Yeah I would get this bar again. Yeah it's good. But I wonder if I could make something low carb like this at home.
