The Roach Coach is Here. Hide the Kids!

    Roach Coach is what we call it at my work. Food on wheels. It comes every morning at about 8:30 and honks it horn about 20 times calling out to us mindless drones in our cubicles to come and eat its greasy goodness.

    I love the food truck. I am sorry, but there is something to be said about food that gets brought to you. It's just so convenient that you just don't care about the taste as much. Some people do care about the taste though.There is a food craze that has been sweeping the nation with these gourmet food trucks. Trucks that make fancy tacos and hot-dogs with caviar on top or whatever. Those are great and all, don't get me wrong, I love me some Kogi but those are definitely just smarmy food trucks. We get the Roach Coach at my work.

    So what's the difference. The fancy food trucks usually specialize in something. All bacon foods, wraps, grilled cheese, fancy hot-dogs, or even cupcakes. A roach coach has a little of everything and its dirty. No fancy vinyl decals, just dingy signs and grease grills. 

    So what do I like? well, it only really comes in the morning so its usually breakfast. The chef makes something written on the trucks white board known as "The Perfect Omelette". It is bacon, ham, sausage, cheese, and egg. That's it. Perfection, maybe not. It is a pretty good omelette for coming off a truck though. Had i driven to get this meal I would be pissed, however that was not the case. Since it magically arrived in my parking lot it was a tasty not to shabby breakfast.

    The wife and I came across this Smuckers Sugar Free Jelly at Target. Looks like is about 4 carbs a serving. Mix that wth some low carb PB and its flashback to childhood. You could also use it for tea parties if you are the Queen, however if you are the Queen, maybe you should stop reading my blog and go do some Queening stuff or something.

McDonald's Angus Chipotle BBQ Bacon Burger Low Carb Review

    Angus. I suppose this term should make me feel like what I am eating is something fancy or perhaps I should feel more comforted to know that it is real "meat". Maybe it is, Maybe it isn't. Maybe it's just a way to trick people to buy a more expensive burger. If that's the case, then I tip my hat to you McDonalds. You have my number. 

    McDonald's Angus Chipotle BBQ Bacon Burger is a burger that was made for a the sauce lover in all of us. Covered in cheese, pickles, onions, bacon, and Chipotle bbq sauce it has a smoky taste that is more BBQ than chipotle in my book. Of course there's nothing wrong with that since I love a good BBQ sauce anyway. Its got a nice sweet taste that makes it feel like it's a special burger maybe from somewhere other than the McDonalds machine.

    I don't really know that I need to give a big in depth review to this burger. Go bunless of course. If you like burgers with BBQ sauce you'll be fine with this. I believe the BBQ sauce has some extra carbs in it because its pretty sweet but I also believe in a world where I can have the occasional sauce and not feel guilty or be judged about it. So eat up. Get a combo with a side salad and you have another low carb meal option from the golden arches.

There is a difference between geek and nerd. It's important that you know that before we begin.

    I am a bit of a self proclaimed "geek". I believe my friends and family would proclaim it as well. I like movies, video games, comic books, Battlestar Galactica and all things that carry the geek stamp of awesomeness. I wanted to go to San Diego Comic-con this year but tickets sold out the day they went on sale. I have gone the last three years, but this year I am forced to watch from a distance. As I grieve the loss of my nerdy forums and superhero filled hallways I remember that every cloud has a silver lining. So perhaps i take this time to reflect at the pluses of not attending this year...

- The convention's food here is not made for the low carber. It's pizza, fries, and greasy burgers. Sure, they have a salad there somewhere, but trust me, priority s not given to making fresh salads for the attendees of this convention. Most geeks just get confused around salads.

- My brother can be a bad influence on me. Not always, but his track record on our trips to comic-con always head into dark territory. By the end of the weekend i will have had some sort of chocolate. In my brothers defense, he got me started on Atkins, so he has the right to break me.

- I will not buy things that my wife will not allow me to frame and display in our living room therefore saving money and embarrassment. Examples include: Life size Yoda, Walking Dead posters, Autographs of Edward James Almos.

- I will not suffer the burning scent of B.O. brought on by thousands of unwashed geek brothers.

- Furries give me the creeps.

- I will not have those awkward elevator conversations with Lou Ferrigno.

Still none of these things fill the hole in my heart so I shall fill my weekend's time with back issues of Batman and Xbox in honor of my loss (probably would have done this anyway).

Low Carb Baked Cheese and Sausage Stuffed Zucchini

    My wife made a delicious dish for me the other day that's pretty low in carb and a great substitute for those of us craving some Italian back in our lives. Its great because it has Italian pork sausage in it and I go nuts for that stuff. Seriously wonderful. The zucchini goes well with the sausage and cheese and it almost tastes like a white lasagna or something. Takes some time to back, but the prep time shouldn't be to bad. 

    If you try it let me know what you think. Here it is...

Ingredients
  • 12 ounces pork sausage
  • 1 large zucchini
  • 3 eggs, beaten
  • 1 cup shredded Colby cheese
  • 2 cups cottage cheese
  • 1 1/2 cups shredded Italian cheese blend
  • 1/2 cup chopped onion
  • 2 tablespoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 pinch garlic salt
  • 1/2 cup chopped tomatoes
Directions
  1. Preheat oven to 350 degrees F (175 degrees C). Butter a baking dish (size is dependent on the size of your zucchini).
  2. Place crumbled sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
  3. Partially cook zucchini in the microwave on high for 5 minutes. Remove from the microwave and let cool for about 10 minutes. Meanwhile, in a medium bowl combine eggs, Colby cheese, cottage cheese, Italian blend cheese, onion, Italian seasoning, salt and pepper.
  4. Slice the zucchini in half lengthwise, remove the seeds and rinse. Place both halves in prepared baking dish and sprinkle with garlic salt. Layer the sausage, tomatoes and cheese mixture in each half.
  5. Bake in preheated oven for 40 minutes. Then broil for 5 minutes to brown the cheese.

Kraft Philadelphia Cooking Creme Review

    Lately I have seen nothing but ads on TV and in magazines for a new cooking product that Kraft has come out with. It seems like it's a product they feel pretty strongly about with all the marketing they are doing to push it into our minds. It's call Kraft Philadelphia Cooking Creme. Its a product designed to be added to meals easily to add extra flavor and taste. And being from their Philidephia line of products, cream cheese must be a major ingredients. This jumped out to me since we all know cream cheese is very low carb. It seemed like it might be an easy product to make a quick low carb meal and worth checking out.

    I picked up a tub of the Italian Cheese and Herb flavored Cooking Creme as it seemed like it may go with some of the veggies I had on hand. I chopped up some zucchini, yellow squash, broccoli and cooked them up with some diced chicken breast. Once all those ingredients were ready I put in about 3/4 of the tub of the cooking creme. It melted over everything pretty quickly. I let in cook in the sauce about three minutes on a low heat to get it the flavors the mix well and then it was time to eat. 

    It was really good. It was very creamy and almost tasted like a pasta dish without the noodles. We found that it was great with fresh Parmesan sprinkled over the top to give it a little extra taste. What's great about this product is that its super easy to use and way less carbs then using a pasta sauce for a recipe like this. The creme itself is 5 carbs for 1/4 a cup. Mix that in with the veggies and you have a super low carb tasty flavorful meal. Again, I can't stress how easy it was to use this. 

    Philadelphia cooking creme comes in a few other flavors and I know we cant wait to give the a try at out house soon.

Togo's Italian Salad is a Meat Eaters Delight.

Togo's has a new salad that they just revealed. It's their new Italian salad and it's great for us low carbers.

One of the things that I really like about Togos salads is how large they are. You definitely get the bang for your buck. These things are always huge and filled with yummy ingredients. As a matter of fact. it's such a hearty salad filled with so much good stuff that you could easily have enough left over for another meal which means savings for me.

What makes this salad so awesome is how much meat they put on it. It's like a deli exploded on my salad. Salami, Ham, Provolone, Cheese, Peppers, and croutons(which I remove) Comes with a Italian dressing that is only 4 carbs. Its a wonderful meat salad, the way I imagine God intended salads to be.

Atkins Bars: Dark Chocolate Almond Coconut Crunch Bar Review

Atkins recently released a new line of flavors in their Advantage bars and shakes that are rolling out in stores now. I spotted one of the new flavors in my store the other day and thought I would give it a try. Dark Chocolate Almond Coconut Crunch Bar, one of the longest names for any Atkins bar ever, was the choice I went with. It's wordy, but its pretty accurate in what it includes. This is about as close to a low carb version of Almond Joy as you are ever gonna get. That being said if you aren't a fan of coconut, you will not like these. It's a lot of coconut. A lot. I think if I was marketing these bars I may have changed the word "crunch" in the title to "chewy". There is so much coconut that the bar has a soft chewiness about it. Any crunch comes from the almonds sprinkled through out. The bottom of the bar is dark chocolate and sets off a nice contrast to the coconut which is good.

I liked it. I am a fan of coconut on occasion, and it is certainly a different type of bar from many of the other Atkins bars you usually see in stores. It offered me some variety, and it's chewiness allowed for me to slowly saver the bar over a longer time. I'll definitely be revisiting these in the future.

P.s people, Coconut is good for your prostate, so you can double stuff these things.

The Atkins Vacation Comeback Day 3

It must be working, cause I feel the tummy dropping back down and feel less bloated from the boat. You can see I havn't had a lot of veggies. That will change after i get kick started back on track this week.
