Atkins Mexican Style Chicken and Veggies Review

Atkins new Mexican Style Chicken and Vegetables is a two sided coin in the frozen meal conversation. Its a good meal with a flaw.

On one side we have a tasty flavorful dinner with good spice and yummy peppers in it. The sauce has an enchilada taste to it and really has good seasoning. It seems like it would be a home run to have with some sort of rice side. Maybe the cauliflower rice would do.

On the second side we have a meal that is mostly sauce and is lacking in substance. It had some veggies which were pretty small and shriveled and although the chicken was tasty there was hardly any of it to be found. I found myself pretty hungry still afterward.

I feel like this is a dish I could make at home in a crock pot too. Something that is still simple but won't leave me hungry after.

Old El Paso Enchilada Sauce

We make enchiladas a bunch at our house. This is a pretty common enchilada sauce you can find in most stores. The carb count isn't too high either. You can always get a spicier one if you want more kick.

Dried Young Coconut for a low carb snack

Here something healthy and lower in carbs to nibble on. Dried young coconut has great flavor and what's really awesome about it is the amount of fiber that it packs into each bite. As you know getting fiber on a low carb diet is essential and so this is a great snack to have around. I know not everyone likes coconut, but I encourage people to try this anyway because unlike other coconut treats this is very soft and chewy and has a great sweet taste. No bitterness at all. Give it a whirl. 

These ones have 14 grams of fiber per serving!! Wowzeers!

Jennie-o Turkey & Gravy in Roasting Pan

I bought this cause it seemed like a pretty good ideas at the time. A nice quick turkey dinner. A cozy meal with little work. An I love me some turkey and gravy. It's total comfort food for me.

This even seemed like an ok idea when we ate it. It came out of the oven hot and the gravy has great flavor. All in all it wasn't to bad.

It because a bad idea when we ate te leftovers that's when it's really became clear that the turkey we were eating was highly processed and probably squeezed out of a tube. Somehow when it was from the oven it didn't bother us as much. This time it did. So much so that I couldn't really do it again.

If I need turkey and gravy again, I want it to feel fresh and real. Not like processed TV-dinner turkey which this was. It's really more of a personal preference. Some people may love it, but I don't thinks it's really our thing.
