Low Carb Chorizo Egg Bake

Last Saturday I was trying to think of what would be good for breakfast. I really didn't want to do the same old thing we do every weekend and something about an Egg Bake sounded like a great substitute. Unfortunately most egg bakes have bread in them and we didn't really have a low carb recipe to follow at the time so I looked through the fridge and tried to whip something up with what we had. So what did we have to work with?
  1. Eggs, about 10. I whipped them together real good. Called them names. made them feel ashamed to be eggs. Then I added a little cream to creamy them up.
  2. Pepper Jack Cheese. I mixed in some shredded cheese into the eggs. Maybe a 1/2- a cup. maybe more. Follow you heart,
  3. Fresh Cilantro. cut this stuff up and mixed it in. Not a ton, maybe a 1/8 cup.
  4. Plain Greek Yogurt. I took about 3 spoonful's and whisked this into the eggs so it would break it down a bit and add some density. If I had cottage cheese I may have used that instead. I did not. I mixed all the above together and pour in a glass baking dish.
  5. Chorizo Sausage. I had some leftover and uncooked that a cooked in a pan quickly. I added it to the mixture in small chucks. I didn't want to mix it in completely because I thought creating flavor pockets was the was to go and this chorizo break apart easy.
  6. Salsa, added some spoonful's of salsa in various parts of the dish.
  7. We baked it for about 23 minutes at 425 degree.

It was tasty. I would play around with the mix a bit more to see how I could get a more fluffy texture to it. I would contemplating using an electric mixer so that it would get more airy next time too. but still. Easy peasy and good taste.

Holy Buckets! My prayers were answered!
Since the beginning of my Atkins Journey I have been wanting to find a snack that would fit that need for chips. Something crunchy and full of flavor that would be a great snack to have during a game or lounging on the couch without any of the carbs or guilt that comes with traditional salted snacks chips. Well folks I found it.

Cello Cheese Whisps are essentially just cheese and air that's baked into a fantastic little crunchy bite size chip. That means its super low carb and high in protein. Eat up friends.

The thing that my wife and I noticed about these is that its pretty easy to stay in the serving size because of how filling they are. I mean, its still cheese and still has that richness that comes with a dairy product. After a few of them you are ready for a break.

What about taste? Well they are pretty much cheese and come with all the flavor that tasty parmesan comes with. There is a slight salt taste but nothing too strong. I hope this snack does well so that the company can put out some more delicious flavors. I could see a Basil Parmesan chip being a hit.

Go buy them now so that my stores near me down stop stocking them. Please! You wont regret it!

Cauliflower Asian Fried Rice

If you eat low carb, then you probable know about cauliflower. Its all the rage these days. People substitute it for all sorts of things. I like to use it for a rice substitute with stir fry. I have even seen recipes using it to make pizza crust. For me personally it only really works if it doesn't taste to much like what it actually is. Cauliflower. That's why this next recipe was a win in our house.

My wife found a wonderful recipe to turn Cauliflower into Fried Rice. It was pretty easy to make and really the hardest thing is taking the time to clean up our food processor after we shred the stuff. Buts its really yummy.

Ingredients serves 3
  • 1 Tablespoon + 1 teaspoon sesame oil
  • 2 eggs
  • 1 small head cauliflower
  • 1/2 cup frozen mixed vegetables
  • 2 green onions
  • 3 cloves garlic, minced
  • salt and pepper
  • 3 Tablespoons gluten-free Tamari or soy sauce (dish will not be GF if using soy sauce)

Directions
  1. Combine 1 teaspoon sesame oil with eggs in a bowl then whisk to combine and set aside. Chop cauliflower head into big chunks then send through a food processor fitted with the grating attachment. Alternatively you could grate the cauliflower on a box grater. Measure out 4 cups grated cauliflower then save the rest for another use.
  2. Heat remaining 1 Tablespoon sesame oil in a wok or large nonstick skillet over high heat. Add cauliflower, green onions, and frozen mixed vegetables then stir fry until cauliflower is just beginning to turn tender, 3-4 minutes. Add garlic, season with salt and pepper, and then continue to stir fry until garlic is fragrant, 30 seconds or so.
  3. Push mixture to the sides of the wok to create an opening in the center then add the eggs and scramble. Toss mixture to combine then drizzle in gluten-free Tamari and mix again to combine. Serve hot.

And we're back...

Two kids later and here I am back on the blog.

Ok, so lets catch ya'll up to speed.

1. We had another baby,
2. I got a new job.
3. I gained back 20 pounds from above mentioned new baby and new job where I sit at a cube all day.

So lets get to the nitty gritty of what's the plan shall we?
I need to get back on track. Like serious track. Now this is a lot harder for some reason that it was 130 pounds before. Because I have been living the last five years with a new lifestyle that is somewhere in the maintaining phase going back means getting new habits, tricks, and new recipes. I also think my body doesn't react to the diet the same way it use to. However, I got to give it a good run to know for sure.

Cooking is very tricky because honestly we are slammed for time in the evenings. It has to be quick and easy or we just cant do it. I can't afford to spend 45 minutes in the kitchen when I have 2 little ones and a ton of other things to get done.

So what are we gonna do?

1. Low Carb diet. Induction phase. As few carbs as possible. 20 is the goal.
2. Have to start exercising again. Easier said than done in our house. Honestly, at this point 3 times a week would be a victory.
3. More steps. I don't walk enough in my job. I sit. A lot. have to get up and move.

So hopefully you are all going to see more of me, because I need the accountability.
