Campbell's Cheesy Chicken Tortilla Soup

The problem with a soup meant for drinking is that for to be drinkable that means there's not much in it. That is the unfortunate case with Campbell's Cheesy Chicken Tortilla soup. It's taste is tomatoey, has a little bit of spice, and cheesiness, but not much in terms of chicken. When I have a soup, I want it to have some chunks and be something that can fill me up. This does not have that.

Perhaps what I need is a soup that comes in a actual can and not something that is easily microwavable for on the go purposes. Unfortunately most of the soups that I looked at in the store that come in cans and have more chunks of meat in them also have much higher carb counts. So if low-carb is what you want unfortunately no flavor is what you get.

Probably won't have this again unless I am on a road trip and want to burn my mouth while driving.

Gorton's Grilled Tilapia Review

As we all know fish is pretty much as low carb as you can get. It's a great healthy option for a meal to help fill you up and will keep the carbs at a very low level for the meal. 

Sometimes however we find ourselves short on time and don't have the ability to prepare our meals like we would like to. And sometimes we are just lazy. To coincide with this way of life I decided to try some of Gorton's Frozen Fish Filets. Buying some fresh fish, seasoning it, and baking it probably wouldn't take much work, but for those of us that prefer the packaged meal route these exist. Specifically I tried the Gorton's Grilled Tilapia. The instructions are pretty simple. Heat up your oven, throw them on some foil in a pan, and let them cook. 

So how are they? Not so bad. The flavor is pretty mild so if you arent a huge seafood fan you may be ok with these. Tilapia is usally a pretty tame fish anyway. The seasoning was ok, not too strong or salty. It had a smokey taste to it. I personally might say that the filets are under seasoned for my taste. 

In terms of prep, they are super easy to make and have no carbs in them at all. My only disappointment is the size. They seem just a tad bit small. I guess you get what you pay for though and for your money you could probably get some fish that wasn't in a packaged box that you could season yourself that was maybe a little bigger. Still not too bad.

Spicy Jalapeño Philadelphia Cream Cheese

Not sure if I shared this before or not, but Philadelphia Cream Cheese has a Jalapeno flavor now which I am a huge fan off. Still low in carbs, but it offers a little extra kick to it. 

I use it for turkey wraps with a low carb tortilla or a quick snack with some salami. It's pretty awesome.

Anyone else use this? How do you guys use it? I be it would rock with some veggies.

Atkins Swedish Meatballs Review

Mushrooms blah!



Why so many mushrooms?



So the new Atkins Swedish Meatball meal is pretty tasty. The meatballs are hearty and tasty and the have a pretty good tasting gravy with the meal. The problem I have with this meal is my own. I am not a mushroom guy. I think they stink and have a gross consistency. The taste is kinda funky too. And while I understand that some people love them, they just aren't for me. I can tolerate them in some dishes if it's not too strong and overpowering. In this particular meal however it is covered with mushrooms. I personally have to ration my bites with mushroom so I can make it through the meal.



Regardless of my own childlike eating habits the meal is pretty tasty. Again the gravy is decent and the meatballs seem hearty enough. This would probably be good to eat with a little homemade cauliflower rice too.

Easy Peasy Japanesy Lettuce Wraps

In an attempt to be a bit daring I decided to improvise my own lettuce wrap recipe. Something simple with not a ton of carbs or sugars in it. So many of the packets you find in groceries stores have a lot of sugar in the sauces. It shouldn't be too hard to have wraps that are easy and dont have a lot of extra stuff in them to bring up the carbs. I therefore attempted to limit my ingredients.  
1 pound of ground Pork Sausage
1/2 Yellow Onion Diced
1 Cup Diced Broccoli
1 Tablespoon Fish Sauce
1 Tablespoon Soy Sauce
1 Tablespoon Splenda Brown Sugar
1 Head of lettuce of your choice. I used Iceberg

The first thing I did was cook my pork Sausage. After the meat is browned, drain off your grease. 
I then added onions and broccoli to the pork and let those cook for about 3-4 minutes. 
Added the Soy Sauce, Fish Sauce and Brown Sugar. Let that cook in the pan for another 2-3 minutes. 
Taste it, depending on your preference you can always add more sauce to increase the taste. Add to the lettuce of your choice.

My wife and I thought this was pretty tasty. The flavor was good and they were pretty filling. All together it only took me about 15-20 minutes.

My only other thought is that the next time I make these I think I will add some chopped peanuts into the mix so that the wraps had a little bit of a crunch with them. But even as they are they are pretty good.
