My wife and I had a date night last night. We went out for dinner and saw a movie. We ate a seafood place which is a little different for us as my wife isn't huge on seafood. We tried a place called McCormick and Schmicks. Very fresh and tasty seafood. I got some almond crusted Trout and she got some cashew crusted Tilapia.

![]() So you're having some friends over this weekend for a little get together but you don't know what to serve to keep them happy. You want to have that little extra something to get the party going but everything has carbs. They don't care, but you do. What do you do? You want some fun too right!? Party is spelled margarita at our house. That delicious lemon-lime green drink seems to always get people having a good time. But most margarita drinks have way too much sugar in them. Most, but not all. On The Border Mexican Grill has a great margarita mix that's sugarfree. Only three carbs per drink. Of course this doesn't account for any alcohol you might add, but if you want to go low-carb why not go nonalcoholic and still have the taste. The drink is a little strong without something to mix in with it so I recommend doing a little diluting with water. Otherwise throw your party, get your sombrero, make your salsa, and have some fun. Out of all the Atkins Bars that they make and I have tried, this bar seems to be the best fitted for breakfast. Maybe because its named after something that usually fits in the breakfast category anyway.
I like these bars. They are light and sweet, and you don't feel like you are eating a candy bar for breakfast. They feel like they belong in part of an early morning routine. They do contain some nuts for those that are bother by those things, but if that doesn't phase you go ahead. Often times, things that go the cinnamon roll flavored route make their flavor too sweet. This bar doesn't do that. It's a nice balance of sweet and cinnamon with a creamy frosting taste. Perfect for those people like myself that have a soft spot for cinnamon and sugar. They are soft too so these bars actually felt like maybe they were fresh. :) 3 Net Carbs Per Bar We had dinner at a friends house the other nice. Yummy pulled pork sandwiches with fresh veggies. I used a low carb tortilla. Tried my first brussel sprouts. The jury is still out on that.
Ok, so a few days ago I posted about some low carb chili that was sent to me by a company called Homestyles. Along with the Beef Chili they also sent me some of their Chicken Chili to try. It has 5 Net grams of carbs in a serving so it's perfect for on the go people who want something light on the carb count and yet hearty enough to still fill them up. What stands out in this stuff is its chunky consistency. There are some serious chunks of meat going on here. Which is great. When I look into a chili I want to be able to clearly see what ingredients went into making it. That's definitely the case here. The flavor is a bit milder then the beef in terms of spice and so its a tamer chili. I think that partially comes from the chicken flavor. No much though, just a bit milder and a smoother taste. This is one that I might recommend to people that do not like a lot of heat. But still very good.
You cant beat a meal that takes under 2 minutes to cook and leave you with plenty of carbs for the rest of the day. If your interested you can buy them on-line at the Homestyles website. If you're ordering pizza it's usually safe to have sausage involved as an ingredient. When making a pasta sauce, we love it when its good and meaty. Well the other day I was looking for something to make that would be super quick and easy since my wife and I both had rehearsals for theater shows we were doing. In a moment of quick thinking I decided to go the Italian sausage sandwich route. I cooked up some mild Italian sausage. Grilled up some peppers and onions. Tossed them all in some low carb tortillas with some Mozzarella Cheese and a low carb pasta sauce.
When it was all done we had some nice heart wraps. Now to be honest, these really deserve a good piece of bread as the tortilla was having hard time holding it all together, but it was still very tastey and only took a few minutes to whip together. Different enough to enjoy and quick for when you're in a hurry. Est Carbs per Wrap 7 There is a local gourmet food-truck meet-up at a bowling alley near our house that happens every Tuesday. My wife and I had plans to go to a little play writing fest at the college we had attended in the past. We decided it might be fun to have a cheat dinner, have some carbs off of the trucks, and make it a date night. There was probably about 8-9 trucks there total and each had something different and all looked very good, but we decided to go with The Lime Truck. The Lime Truck is the winner of the Food Networks Great Food Truck Race. Rightfully so. They have wonderfully unique items and they are all full of flavor. We tried a couple tacos and their signature Carnitas Fries. None of it was low carb, but its was all very yummy. Today, I make up for it with a low carb lunch of egg salad. Or maybe some chicken. Lots of chicken. There's a new sheriff/cookie in town. Since I have started Atkins several years ago my wife and I have been in a constant search for good recipes to substitute for the snacks and treats I used to enjoy. Finding good low carb alternatives to cookies, cakes, and chocolate has been difficult because if you want those things to be sweet and flavorful, well carbs can be hidden away in those items. We have tried many recipes and some have been OK and others not so much. Specifically we have attempted cookies several times and its been difficult. A lot of cookie recipes lack flavor and come out kinda bland and on top of that many have more carbs then you may want for a typical snack. It would be nice to be able to have a cookie that satisfies and does not feel like its a waste of carbs. ![]() Well when I was surfing the web the other day I came across a new cookie with a big promise for us low carb eaters. Zero Cookies are made by a bakery in La Jolla CA and they claim that their cookies have zero carbs. That's right, zero carbs. Hold on.....ZERO! Because of the amount and type of fiber, natural sweeteners, and ingredients they use they have come up with a cookie that's literally carb free. Your body does not metabolize some of the sweeteners and ingredients that are in them. You can eat all the cookies you want without the guilt of the carbs. According to their website "Zero Cookies have less digestible carbohydrate calories in a dozen large 2-ounce cookies than a cup of broccoli and more fiber in one cookie than in 3 cups of broccoli." Wowzers! So the real question is, how do they taste? The bakery makes three flavors Cocoa Delight, Ginger Spice, and Strawberry Banana Perfection. I was able to try the Ginger Spice cookies . Ginger cookies are something I loved from my pre low carb days and so it seemed like a great one for me to review. What's great about these cookies is the texture. So many low carb cookies I have tried feel dry and have an odd consistency but these were soft and fresh just like a normal fresh baked cookie should be. The taste was great too. You're not over powered with too much ginger taste and the spice is just the right amount. They are not as extremely sweet as regular ginger cookies might usually be but that didn't bother me at all. The light frosting on top adds a bit of extra sweetness to them. They are light, fresh, and you feel like you are eating a real actual cookie, which as silly as it sounds is rare with other low carb cookie treats. All that to say, I loved these cookies! These are the best low/NO carb cookies I have tried! They make for a excellent snack and you really don't have any of the guilt that would normally come with them. Zero! Cookies Quik Tip: The package recommended to place the cookie in the microwave for 3-5 seconds for a fresh baked cookie feel. I highly recommend this! I actually thought that beside making them feel all fresh and soft, the heat brought out a little more of the flavor in the cookies. Definitely worth trying. Happy belated Easter! Yesterday I got together with some friends and the in-laws and we had a little bit of a barbecue. We did the make your own kebabs style barbecue. Chicken, onions, peppers, mushrooms, and more. All the fixings for good kebabs were there.
It was a beautiful spring day out and the sun was beating down so we broke out the bocce balls. Things got a little intense in the game. Anyway here is a couple pics from our Easter. Another day, another lettuce wrap. These came from a place down the street from me called Twisted Noodle. Did I mention I love lettuce wraps? No? Oh, well I do.
