Foster Farms Turkey Meatballs are Low Carb Easy

Need something quick and easy that will fill you up? How about Meatballs? Everyone loves a meatball. An if you don't, well you may be a communist. 

Foster Farms has some great meatballs in the freezer section you can try out. If you can find ones that are beef you will probably get lower carbs, but the turkey ones are tasty. Plus, Meatballs are quick easy, so if your lazy like me you can have warm meatballs in two minutes. If your creative you can use them to make a nice little meal for yourself. Just think outside the box.

How about on pizza?
In a wrap? 
In a salad?
Kabobs? 

I don't know, what do you think? How would you use these to get through your low carb day?

Quick and Easy Chicken Curry

There are some days I feel like I am eating the same thing over and over again. a salad, and some meat. Same thing as the day before. Its hard to want to continue eating an Atkins diet when you feel like your meals are all the same. In times like this its good to play around with some different flavors. Switch things up on your taste buds and trick you brain with something new.

One of those flavors that is a bit different and may not be for everyone is that of curry. Its actually really easy to make a simple chicken curry and it can be a nice change of pace from before. This is a basic recipe I found online and tried myself. I suggest when you try this that you spice it to taste, as some people just cant take much of the curry spice.

What you need
boneless chicken breast halves - cut into strips
olive oil
onions, diced
curry powder, add to taste

Directions
1. Heat a little oil in a large skillet over medium heat. Add your diced onion and saute until soft and golden brown. Slowly stir in curry powder. Once ingredients are blended together, add chicken breasts. Cover skillet and simmer over medium low heat for about 20 minutes or until chicken is cooked through and no longer pink inside.
2. Remove cover from skillet and cook for an additional 15 minutes, until sauce reduces. (Note: Make sure that you stir and that dish does not burn, as curry powder burns very easily!) .

I like to serve my chicken curry on some shredded and cooked Cauliflower. Its a great rice subsititue and tastes great.

TOGO's Cobb Salad

It’s another Cobb Salad here on PMA. Seems like a classic go-to meal when you are out looking for something quick and easy.

Most of the traditional ingredients in the Cobb are low carb.  It usually has chicken, bacon, egg, blue cheese crumbles and tomatoes.  TOGO's adds a nice scoop of fresh guacamole on top to set in something different. They have a great blue cheese dressing that is very creamy and has a nice soft smooth taste to it. In other words you aren’t over powered by the bitter taste of blue cheese like some others.

More than anything it’s big, so you get a nice hearty meal and you probably won’t finish it all. Of the quick fast food Cobb salads out there this is one of my favorites. It just all tastes fresh and they use real egg! And for me it’s those little things that make all the difference.

Chorizo Omelette from Side Street Cafe

One of my favorite breakfast spots here in Orange County is a little place in Newport Beach called Side Street Cafe. Great food that is always made fresh. One of my favorite things that they have is their Chorizo Omelette with sour cream & salsa. Its amazing. its the perfect blend of spice and savory. Normally it comes with potatoes but I substitute it for a bowl of fresh fruit (and it is very fresh). Its pretty incredible. You readers in Orange county should check it out, or pick up some Chorizo yourself and make a tasty omelette. Nom Nom Nom!

Jack in the Box: Ultimate Cheeseburger Lettuce Wrapped

To me Jack in the Box is the fast food chain that is the most honest about what it is. They do burgers, quickly, and cheaply. They aren't really known for being innovative with their food or for making healthy alternatives. Your not going to get a gourmet meal here. Any salads they unveil were probably unveiled months before at some other fast food place. They even use those "chicken" patties we all ate in elementary school for a couple of their sandwiches. The fact that Jack in the Box takes this approach oddly instills a level of confidence in me. When I want a big meaty simple burger I know that they can at least deliver that.

Their Ultimate Cheeseburger is just that. Two patties of meat, cheese, and some Mayo. Its really all you need. Nothing more. This was a burger I used to order even before I went into the low carb lifestyle because its always simple and hearty.

The flaw that I seem to find with getting the Ultimate Cheeseburger now is that Jack in the Box doesn't really have a system for making it low carb. They will do it for you if you ask, but they have no idea how to wrap it in lettuce. It's basically tossed on a leaf and put in a bowl. Still, if you don't mind eating it with a knife and fork its ok. Its an option and it tastes alright. Its not my favorite burger out there, but fills you belly and extremely low in carbs.

OK, so the following may not be the fanciest meal in the world but it is easy, and if you like peanut buttery taste in your Asian food then its a great fix. I also like to remind people that cooking should be fun, so sometimes I may not have exact measurements on a recipe. That's because I experiment a bit with the taste and the measurements get lost a bit in the mix. This is one of those recipes. Read more after the jump....
