Egg Salad Wraps. A Low Carb Twist on a Easy Lunch Staple.

    I went down the street to a little soup and sandwich shop near me for lunch today. I learned that they make lettuce wrap versions of some of their salads. so I thought I would give them a try. I went for the egg salad version. It's really a simple idea and works so well. I loved that they included a little red pepper and tomato in them to give some added flavor. It's a great trick to do when you want to go the egg salad route. I'm sure I will go back to this place too since they are so near to my employer.

Cheese Fondue with Veggies. Yeah Thats How We Roll.

    I don't know what the recipe was that she used, but my wife made some yummy cheese fondue the other night. We had some close friends over and ate all sorts of things dipped in yummy cheese. It's a great thing for the low carb people out there. Broccoli, carrots, beef, cauliflower, and apples were my choices to dip. Yummy. If you have a fondue pot there are tons of recipes on-line. Great for the big game coming up too. 

    And who doesn't like cheese!

Starting My Morning Right with French Press Coffee

    My wife bought be a mini French press that I can use at work. She gave it to me for Christmas. I love it so much. I use it almost every day. It's just so great to start my morning with a warm cup of good flavorful coffee. I know that on the low carb diet they don't recommend coffee really, cause it causes craving and other stuff but I have to have it. The caffeine helps me get started in the morning. So yummy. This morning I had a Kona blend from my local grocery store. A really yummy chocolate nutty flavor.

Mongolian BBQ for the Low Carb Diet

    About a week ago some friends and I went out for dinner at a Mongolian BBQ. Welcome to paradise low carb eaters. This place is a dream come true. 

    Essentially its a buffet where you pick your meats, your veggies, your sauces, and then the cooks will stir-fry it for you. You hold full control over what you eat. They give you some combination recommendations but its really up to you. Its a great for people that want more meat and less carbs. Pick the veggies you want and do as much as you like. Still hungry, Do a second pass. 

    Heres a bowl I made. Tasted pretty good too. I added some hot oil and a little curry sauce. If you don't like it, well you have no one to blame but yourself. Check Yelp to see if there are any in your area.

Sugar Free Rasberry Jello Treats.

    We hung out with friends the other night. We had them over for dinner because their kitchen was being remodeled. My wife made low carb beef enchiladas which were yummy. The big treat of the night however was brought by our guests. They brought over some yummy raspberry Jello dessert. Sugar free of course with real raspberries, and a little bit of raspberry vodka. Low carb whip cream to top it off. Normally I wouldn't care to much for Jello, but it was very yummy and I ate it all up. :)

Newman's Own Low Carb Garden Pepper Pasta Sauce Review

    Giving back and eating Low carb at the same time, sure why not!

    I am always reading labels now. Looking for the lowest carb option on the shelf. Every carb adds up. So when a pasta sauce came along with low carbs in it we jumped at the chance to try it. We don't eat much pasta in our house anymore. Not since the "Lifestyle change" of eating low carb happened. Even with the introduction to low carb pasta it still is a treat to have on occasion. Probably because im not sure I trust tnhe idea of low carb pasta completely. Still, we do use pasta sauce for other things so its nice to know which one is best for our low carb needs.

    Newsman's Own has a Garden Pepper pasta sauce which is very low carb. Five Carbs a serving and 1/2 cup serving size. I usually don't even need a 1/2 of sauce with my pasta or food. The flavor is a little mild in terms of spice, and I guess with pepper in the title I expected a little more heat to it, but it would be very easy to add some spice to it if you wanted to. You could even toss in some meat if you really wanted to live on the wild side. Why not, you earned it!

    The great thing of course about eating Newsman's Own products is that they are a non profit. 100% of the proceeds from the sales of their goods go back to charities around the country. Its that extra little detail that really makes this a pasta sauce with very little guilt attached.

    I just realized today that last week was PMA's Birthday. One year has gone by now. Can't say that I know what I'm doing yet, but I think we've had some fun so far. No plans to stop. I'd love to keep things coming on here as long you guys want read the posts.

Weekend Fun with Friends, Food, and... Gaga

    Had a great time this past weekend with my wife and friends. Seems like we can't help but cram it full of fun hangouts with friends and good times. 

    He have this huge pile of leafs in front of our apartment that the maintenance crew raked up. They haven't come by for a couple days to bag it so Cambria and I decided to go ahead and have a little fun in it. I forgot how easy it is to get leaf dust in all your nooks and crannies though.

    On top of that we hung out with some close friends of ours. We love to play games and the weather was turning gloomy so we pulled out the old standby game of Boys vs. Girls Sequence. Its a simple game, and I remember the rules, so that's probably why I like it. The Ladies won 3-2. Although its possible we gave it to them based off the old adage "Happy Wife, Happy Life".

    After our game, I somehow got talked into getting pizza from a favorite local place(Haus of Pizza) and going to watch the Golden Globes at our friends house. I decided that I had been doing pretty good after the holidays so I could have a piece or two. Problem is, on the way home I talked myself into a mistake. We stopped and got late night tacos, a habit from my college days. I was full, sick, and guilty. Immediately I didn't know why I had done it. There was only one thing I could do to help take away the guilty and sleep easy. Dance it out.

    It took away some of the guilty of the carbs, but I had a whole new guilt to deal with. The kind that comes with dancing to Lady Gaga at 10:30pm.

    Today I am going extra light and low carb to make up for yesterday and even the scales up a bit. I will also do a dance to something more Heavy Metal to even thoses scales.
