And we're back...

Two kids later and here I am back on the blog.

Ok, so lets catch ya'll up to speed.

1. We had another baby,
2. I got a new job.
3. I gained back 20 pounds from above mentioned new baby and new job where I sit at a cube all day.

So lets get to the nitty gritty of what's the plan shall we?
I need to get back on track. Like serious track. Now this is a lot harder for some reason that it was 130 pounds before. Because I have been living the last five years with a new lifestyle that is somewhere in the maintaining phase going back means getting new habits, tricks, and new recipes. I also think my body doesn't react to the diet the same way it use to. However, I got to give it a good run to know for sure.

Cooking is very tricky because honestly we are slammed for time in the evenings. It has to be quick and easy or we just cant do it. I can't afford to spend 45 minutes in the kitchen when I have 2 little ones and a ton of other things to get done.

So what are we gonna do?

1. Low Carb diet. Induction phase. As few carbs as possible. 20 is the goal.
2. Have to start exercising again. Easier said than done in our house. Honestly, at this point 3 times a week would be a victory.
3. More steps. I don't walk enough in my job. I sit. A lot. have to get up and move.

So hopefully you are all going to see more of me, because I need the accountability.

Good luck, you can do it! I've found a great timesaver...I use the "Instantpot". It is amazing! There are lots of low carb recipes for it...my 2 favorite things are ribs in it and the fact that I can cook frozen chicken in about 15-20 minutes on the nights I forget to thaw anything!

Thanks Allison, I've never really used a pressure cooker before, but if they are fast, i may have to look into it. We do crock pots all the time. Is it similar, just a faster version?

I second the Instant Pot. It's NOTHING like a crock pot. Food comes out of it with flavor. I made a frozen corned beef the other day in 90 minutes. Frozen chicken breasts in 12 minutes. (not counting the time it takes to get to pressure - maybe 10 minutes??) We've been off track for awhile too because, well...life... but the instant pot is helping us get control again. Can't wait in a drive thru line as quick as you can make stuff in it - no excuses! Glad you are back to blogging and things are going well with you personally. I found your website a huge inspiration when dealing with the huge chunk of weight loss years ago. Now I'm maintaining too, more or less with life giving me the same 10 pounds over and over again and me losing them again and again. Congrats on the sweet kiddos!

Like Gwen said...nothing like a crockpot! I actually have lunch cooking in it now! It is truly a "one stop shop" kind of deal. It has a saute function, slow cook function, pressure cook function, and various others. Right now, I saute'd butter and chopped onions, popped 2 pork chops on top, poured a little balsamic vinegar and then turned it on. 10 min later pork chops are done...take them out, saute some green beans in the remaining juices and onions. And there you go! One pan, low carb, super moist meat, and very delicious!

Also, wanted to say that my husband and I are getting ourselves back on track too! :-) It'll be fun to all do this together! He reads your blog and was excited to see that you're back!

I'm in! Need to get back on track as well and definitely will take all the tips that you helped with the first time. My biggest weakness is chips or a good crunchy treat. I have been using the Mission low carb tortillas and bake them. Spray a little olive oil and sprinkle on the seasoning of choice for the day and a chip is made. Celery crunch just doesn't seem to satisfy that chip wanted craving... You can do this! I can do this! We got this! 💪🏽

I followed Atkins before, around 10 years ago, and lost about 50 pounds. Since then I've gained all that back and more. I'm so glad I found your blog today! Today's a great day to restart, too :)
